- 1 pahar de zeama de peste<br />
- 1/8 l smantana<br />
- 2-3 linguri de mustar<br />

Fileurile de pastrav ( de mare) le impartim in opt portii si turnam peste ele sucul de lamaie. Adaugam varza acra taiata, boabele de ienupar, vinul, sarea, piperul. Adaugam apoi si zaharul si fierbem inabusit cca 8 minute. Pestele il condimentam cu sare si piper si jumatatile de peste le acoperim. Turnam circa 100 gr zeama de peste, punem un capac si frigem la cuptor cca 12 minute. Smantana o fierbem pana se ingroasa, adaugam restul de zeama de peste si fierbem pana cand se ingroasa totul. Adaugam mustarul, sarea, piperul si putin zahar, dupa gust. Varza o impartim in portii si o servim cu acest sos.<strong><br /></strong><br />

Dupa aceea, acoperim cu un capac si la foc mic o frigem cam 25 minute. Dupa 20 minute intoarcem carnea pe partea cealalta. Carnaciorii ii frigem intr-un vas. Sparanghelul bine spalat se fierbe la foc slab, apoi se adauga sucul de lamaie si frunzele de patrunjel, marunt taiat. Pe fiecare felie de sunca se pune o felie de branza, peste care se pun 3-4 sparangheli, se ruleaza si se aseaza cu atentie intr-un vas. Inainte de intrebuintare, se incalzeste vasul circa cinci minute la foc mediu. Sparanghelii rulati se frig vreo 10 minute, se ia vasul de pe foc si se toarna smantana peste el. Ficatul tanar de vitel sau pasare, se taie felii de 2 cm grosime, se pipereaza putin, se da prin faina, apoi se prajeste in untdelemn pus de 1/2 cm in tigaie, 5 minute pe o parte si 5 minute pe cealalta. Nu se sareaza decat in momentul servirii la masa, deoarece sarea intareste ficatul. Merele curatate si taiate felii de 1cm grosime se prajesc in grasimea in care s-a prajit. Se sareaza si ele putin si se servesc ca garnitura.<strong><br /></strong><br />

<b><br /></b> Pestele curatat bine se aseaza in tava. Se pun toate cele mentionate in jurul lui, cu untdelemnul turnat deasupra. Se da la cuptor 40-50 minute. Se stropeste cu sosul din tava si se taie file.<b><br /></b><br />

Cartofii se fierb cu coaja. Ouale se fierb tari. Se curata ouale si cartofii si se aseaza in cratita unsa cu unt, se pune un rand de cartofi, se presara putina sare fina, apoi un rand de oua taiate felii. Cu lingurita se distribuie jumatate smantana, apoi si cartofii presarati cu putina sare, oua, smantana. Deasupra se pune pesmetul rumenit 2 minute in unt si se imparte peste tot. Se dau la cuptor sa se infierbante.<br />

Se apasa putin pe servet. Se dau prin ulei pe ambele parti si se pun pe gratarul incins. Se rumenesc pe ambele parti, apoi se servesc calde cu bucatele de unt si patrunjel tocat, sau reci cu mujdei de usturoi, cu zeama de lamaie, sare, untdelemn si putina apa cat sa cuprinda bine ciupercile.<br />
